PALO, Iowa — A healthy recipe won a Viola Gibson 3rd grader a trip to the White House.

Next month, eight-year-old Anabel Bradley, of Palo, will meet First Lady Michelle Obama as part of the 3rd annual Healthy Lunchtime Challenge and Kid’s State Dinner.

Eight to 12-year-olds were asked to create a healthy lunch that used all or most of the USDA’s recommended food groups; fruit, grains, protein, dairy and vegetables.

Fifteen-hundred entered. Judges picked 54 winners; one from each state, plus the Virgin Islands, Puerto Rico, Guam and D.C. Anabel was selected to represent Iowa with her dish “Over the Rainbow Veggie Pancakes.”

“Some carrots for the orange, yellow peppers for the yellow, then asparagus for the green and tomatoes for the red,” said Anabel.

Anabel and her mother, Julie Bradley, found out they won the trip, Wednesday.

“Eating well is a really important component to kids growing up healthy. For her recipe to get chosen and her to be the representative means a lot,” said Julie.

The Kid’s State Dinner will be on July 18th.

Besides heading to the event, Anabel’s recipe also will be placed in a cookbook featuring all of this year’s winners.
