Our Town Dyersville: Nu-World Produces Gluten-Free Food

DYERSVILLE - Nearly 2 million people suffer from Celiac Disease, a food allergen caused by the protein gluten.
Gluten is found in many foods we enjoy every day, limiting what people with Celiac Disease can eat.
Nu-World Amaranth is harnessing the power of an ancient crop, changing the lives of those suffering from food allergies.
In the early 1980's Larry Walters acquired a pound and a half of Amaranth seed.
Amaranth, an ancient crop rich in nutrients and health benefits can be used to produce allergen free food.
Larry Walters is the founder of Nu-World Amaranth, "Here was an ancient crop that had been a nutrition base for not just one ancient culture, but multiple ancient cultures around the world. It had been pushed back on the food pantry of the universe, literally forgotten about.”
Now twenty years later Walters has turned an ancient crop into a growing business.
Their Dyersville production facility produces gluten free products such as brownies, cereal, and waffle mixes.
"It’s amazing the number of people that are being touched and impacted by a need for gluten free, allergen free foods,” said company president Susan Walters-Flood.
Tana Wendling works in quality control, she said their projects are enjoyable by all, “We have people that work here that absolutely love our product, me as well."
In the past year Nu World Amaranth has seen tremendous growth.
The company has already started an expansion project, and is increasing their production line.
"Looking at the number of case boxes the pound of ingredients that go in and out of the door every day, it’s very exciting. We're looking to double if not more,” said Walters-Flood.
Nu World has grown from a small family business to a company distributing its products nationwide.
