The kids are back in school and everyone is busy with evening activities. Who has time for dinner? And most importantly, who has time to prepare that dinner meal?

Chicken Alfredo Pizza
· 1 (10 oz) Boboli thin 100%-whole wheat pizza crust
· 3/4 cup Ragu light Parmesan Alfredo sauce
· 1 cup diced Tyson boxed grilled chicken slices
· 1/3 cup frozen Hy-Vee chopped spinach, thawed, drained
· 1 cup Hy-Vee finely shredded part-skim mozzarella cheese
· 1 Roma tomato, thinly sliced
1.Remove pizza crust from package and place on 10-inch round pizza pan.
2.Spread Alfredo sauce on crust, to within 1 inch of edge of crust.
3.Over Alfredo sauce, layer chicken, spinach, cheese and tomato.
4.Bake at 425° for 10 to 12 minutes.

Nutrition Per Serving: 200 calories, 20 g carbohydrates, 13g protein, 7g fat, 1g fiber, 80mg sodium
*Serve with some fresh grapes, a leafy green salad and a glass of milk.
Fiesta Soup
· 1 (10 ounce) bag frozen Hy-Vee Fiesta vegetable blend, thawed
· 1 (15 ounce) can Hy-Vee black beans, rinsed and drained
· 1 (24 ounce) jar Grand Selections medium black bean & corn salsa
· 2 (14 ounces each) cans Hy-Vee reduced-sodium chicken broth
· Crushed tortilla chips and shredded cheddar cheese for garnish, optional
1.Combine Fiesta blend vegetables, beans and salsa in a large saucepan over medium heat.
2. Stir in chicken broth.
3. Bring to a boil. Simmer over low heat for 10 minutes.
4. Garnish with chips and cheese, if desired.

*Serve with fresh pears and toasted tortillas.
Citrus Beef and Lo Mein
· 1/2 pound Hy-Vee Blue Ribbon beef stew meat
· Hy-Vee salt and Hy-Vee pepper, to taste
· 2 teaspoons Grand Selections olive oil
· 1/2 cup teriyaki stir-fry sauce
· 1/2 cup Hy-Vee orange juice
· 1 (16 ounce) bag frozen Hy-Vee Oriental vegetables
· 3 cups cooked Hy-Vee linguine noodles
1. Season meat with salt and pepper. Heat oil in a large skillet. Add meat; sauté until browned, about 5 minutes.
2. Stir together stir-fry sauce and orange juice.
3. Stir orange juice mixture and vegetables into meat.
4. Cover. Simmer 9 minutes or until meat is cooked through.
5. Serve with cooked linguine noodles.
