ISU Extension: Snacks for Spring Parties

With warmer weather quickly approaching, we don't want to be spending all our time indoors cooking. This recipe can be made ahead of time, and when you are ready to eat you can just take them out to thaw and serve. You can also save time by making two or three batches at once. These are especially great this time of year as berries are in season. These are great for breakfast, afternoon snack, or dessert or at a graduation party or Memorial Day cook-out.

• Frozen strawberries can be used, and are less expensive in the winter
• Store fruit cups in plastic freezer container – will keep for several weeks
• Use other fruits, such as mango or melon

Frozen fruit cups:

2 C fresh strawberries, sliced
1 medium to large banana, sliced
2 kiwi, sliced
2 t sugar

1. Wash produce
2. Mix strawberries with sugar, let set for 20-30 minutes
3. Add banana and kiwi to strawberries
4. Scoop ½ C mixture into each of six muffin cups lined with paper
5. Freeze. Thaw 20-30 minutes before serving.
