    Holiday Gifts in a Jar

    Bring holiday cheer to your friends and family this year with a homemade gift! Today, your Mount Vernon Road Hy-Vee dietitian will share three recipes for gifts in a jar. These are budget-friendly, health-conscious recipes that are sure to be appreciated on cold winter days. Assembling these gifts is a fun tradition the whole family can enjoy.

    Bed & Breakfast Pancake Mix
    Jar Ingredients:
    1 cup Hy-Vee flour
    1 cup whole wheat pastry flour
    ¼ cup quick-cooking Hy-Vee oatmeal
    ? cup cornmeal
    ?cup wheat germ
    ¼ cup Hy-Vee dried blueberries
    1 ½ Tbsp. baking powder
    1 tsp. salt
    Combine all ingredients. Place mixture in a quart jar with a tight-fitting lid. Keep refrigerated until ready to use.
    Directions for Bed & Breakfast Pancakes (makes 8 pancakes):
    1 ½ cups Bed & Breakfast pancake mix
    1 cup Hy-Vee milk
    ¼ cup Hy-Vee canola oil
    1 egg
    Pre-heat griddle to 400°F. Stir ingredients together until well-mixed. Use ¼ up measure to pour batter onto griddle. Bake on 400° griddle until done.

    Farmhouse Bean Soup
    Jar Ingredients:
    ½ cup elbow macaroni
    1 cup green split peas
    1 cup red lentils
    1 cup pearl barley
    ½ cup dried onion flakes
    2 tsp. celery flakes
    2 Tbsp. dried parsley
    1 tsp. black pepper
    Place macaroni in a plastic sandwich bag. Layer the ingredients in a 1-quart jar in this order: split peas, red lentils, pearl barley, onion flakes, celery flakes, parsley, pepper and bagged macaroni.
    Directions for Farmhouse Bean Soup:
    1 pound lean ground beef
    3 quarts beef broth
    In a large pot, cook beef over medium heat, stirring constantly until cooked through. Drain off any excess fat. Add broth and jar ingredients, except the bag of macaroni to the pot. Bring to a boil over medium-high heat. Reduce heat to low, cover and simmer 30 minutes. Add macaroni and continue to simmer an additional 10 minutes or until peas are tender and macaroni is cooked.

    Peppermint Stick Cocoa Mix
    Jar Ingredients:
    1 cup Hy-Vee non-fat dry milk powder
    1 cup Hy-Vee unsweetened cocoa powder
    1 cup granulated sugar
    ½ tsp. salt
    ½ cup Hy-Vee miniature chocolate chips
    ½ cup crushed peppermint candy
    Layer all ingredients in a 1-quart jar.
    Directions for Peppermint Stick Cocoa:
    Mix contents in large bowl. For each serving, place 1/3 cup cocoa mix in a mug and stir in 1 cup boiling water.
